Boards

The boards person is responsible for making all sandwiches, mac & cheese and grilled nuggets.

Bun's

  • Toasted White Bun - Buttered and toasted. Typically served with Regular, Spicy, and Deluxes.

  • Toasted Brioche Multigrain - Only toasted. Typically served with Grilled Sandwich and Grilled Club.

  • Gluten Free Bun - This bun is served in a package. This package is not opened, if opened, it will no longer be gluten free

Pickle's - One serving of pickles are only two slices, and placed on the bun touching but not overlapping.

Reg's

  • CFA Reg - The original chicken sandwich. Served on a toasted buttered bun, with pickles and a regular filet (smooth side up). Packaged in a white foil bag.

  • Spicy Reg - The Spicy chicken sandwich. Served on a toasted buttered bun, with pickles and a spicy filet (smooth side up). Packaged in a red foil bag.

Deluxe

  • Regular Deluxe - Served on a toasted buttered bun, two pieces of lettuce (4" pieces), 2 slices of tomatoes, regual filet (smooth side up) and a slice of american cheese (Colby Jack or Pepper Jack). Packaged in a clam shell.

  • Spicy Deluxe - Served on a toasted buttered bun, two pieces of lettuce (4" pieces), 2 slices of tomatoes, spicy filet (smooth side up) and a slice of pepper jack cheese (american or colby jack). Packaged in a clam shell.

Grilled

  • Grilled Chicken Sandwich - Served on a toasted multigrain bun, two pieces of lettuce (4" pieces), 2 slices of tomatoes and grilled filet (pretty side up). Packaged in a clam shell with a sleeve.

  • Grilled Chicken Club - Served on a toasted multigrain bun, two pieces of lettuce (4" pieces), 2 slices of tomatoes, grilled filet (pretty side up), colby jack cheese (american or pepper jack) and three pieces of bacon. Packaged in a clam shell and a sleeve.

  • Gluten Free - when making a gluten free sandwich, change your gloves before making anything. Prepare all the ingredients in a 16 oz paper bowl except for the bun.

Grilled Nuggets

  • 5 count - served in the red 4 oz paper bowl.

  • 8 & 12 count - served in the white 5 oz paper bowl.

  • 30 count - served in the 16 oz paper bowl.

Mac & Cheese

  • Baked for 35 min of 325 degrees F.

  • Small - served in the red 4 oz paper bowl.

  • Medium - served in the white 5 oz paper bowl.

  • Large -served in the red 16 oz paper bowl.

  • Discuss Utensils and Set Up

  • Discuss KPS Acronyms and Primary Breakfast Menu Items

  • Discuss Product Hold Times and Temperature Requirement

  • Assembling and holding biscuits

    • Assembling and wrapping biscuits

      • Chick-fil-A chicken biscuits

      • Holding assembled biscuits

      • Have each student imitate assembling and wrapping chicken biscuits

  • Assembling and wrapping English muffins

    • Have each student assemble and wrap an egg white grill

  • Preparing, holding and boxing Chick-fil-A chick-n-minis

    • Thawing, baking and holding mini rolls

    • Assembling and boxing chick-n-minis

    • Holding assembled chick-n-minis

    • Honey Butter - should not be liquid

    • Have a team student imitate brushing mini yeast rolls with honey butter

    • Have each student imitate assembling and boxing 4-ct chick-n-minis

  • Assembling and wrapping burritos

    • Have each TM assemble and wrap a chicken burrito

    • Discuss importance of ingredient amounts and final weight and size

    • Weigh them all and determine the winner based on who is closest to the exact weight goal
