DINING ROOM
Today's training will prepare you how to operate a successful dining room shift. Dining room is an essential part of the business, because the team member in the dining room is the face for Chick-fil-A.
Job Requirements
Table Check-ins, (take care of the trays, sauces, refills) Guest should never leave their table.
Cleaning and Marinating (details listed below)

Table/Chair/High Chairs Cleanliness and Maintenance
1. Tables/chairs (including legs and underneath surfaces) are clean (free of dirt, food particles, gum, liquid spills, oil buildup), arranged neatly, level on floor and in good condition (free of chipped paint, cracks, gouges etc.); Chairs do not have loose seat pads
2. Upholstery is clean (free of dirt, dust, food particles, spills and oil buildup) and in good condition (free of cuts, tears or worn areas)
3. Crevices in booth seats are clean (free of food, dirt, dust and oil buildup)
4. At least one high chair is present in Dining Room; each high chair clean (free of dirt, sticky residue, food particles, buildup, liquids/spills and smears), level on floor with functional straps and buckles; eating surface is in good condition (free of stains and gouges)
5. Items on tables are arranged neatly; if flower vases are present, they are filled with fresh flowers (not wilted or dying); silk or plastic flowers may not be used
6. When sanitizing, sanitizer must remain on surfaces for 60 seconds to kill harmful contaminants
CONDIMENT STATION (DINING ROOM) Cleanliness and Maintenance
1. Condiment station countertop, bins (inside and out) and labels (if present) are neatly organized, uncluttered, dry, clean (free of trash, dirt, debris and stains), and in good condition (free of chipped paint, gouges, cracks or peeling edges)
2. Dispensers (including napkin dispensers, salt and pepper shakers, straw dispensers and toothpick dispensers) are dry, clean (free of trash, dirt, sticky residue and buildup), functional and in good condition (free of cracks, chips or other damage) and are filled at all times
3. Condiment bins and dispensers are well-stocked at all times (using First In, First Out method)
4. When sanitizing, sanitizer must remain on surfaces for 60 seconds to kill harmful contaminants.
TRASH RECEPTACLES/STORAGE AREAS (DINING ROOM) Cleanliness and Maintenance
1. Trash receptacles are free of unpleasant odors (e.g., rotten or decomposing odors)
2. Paper guides are functional
3. External surfaces, including paper guide, metal tray guard and casters/supports are clean (free of spills, food buildup, dust and dirt), all surfaces are in good condition and exterior laminate (in guests’ view) is free of damage or peeling
4. Plastic liners inside trash receptacles are clean (free of spills, food buildup, dust and dirt) and in good condition (free of damage, cracks or leakage)
5. Storage areas are uncluttered and clean (free of spills, food buildup, dust, dirt and debris); Storage area doors close properly and are in good condition
6. Cleaning agents are stored separately from food and paper products
7. When sanitizing, sanitizer must remain on surfaces for 60 seconds to kill harmful contaminants
WALLS/FIXTURES/DECORATIVE ITEMS (DINING ROOM) Cleanliness and Maintenance
1. Wallpaper is clean (free of dirt, dust, graffiti, cobwebs and oil buildup) and in good condition (free of peeling edges, visible scratches, tears or holes)
2. Light fixtures attached to wall are in good condition and uniform in color, type and wattage
3. Pictures, planters, fixtures and decorative items on walls are clean (free of dirt, dust, fingerprints, smudges, gum and oil buildup), Chick-fil- A, Inc. approved and in good condition
4. Logos are clean (free of dirt, dust, gum, cobwebs and oil buildup) and in good condition (free of visible scratches or chipped paint)
5. Plants and planters are clean (free of dirt, dust, gum, cobwebs and oil buildup) and in good condition; plants are healthy and well-tended
FLOORS/BASEBOARDS (DINING ROOM) Cleanliness and Maintenance
1. Floors, tile grout and baseboards are uncluttered and clean (free of excessive dirt, dust, debris, gum, long-term spills, food particles and oil buildup) and in good condition (free of visible scratches, chips, missing/broken grout or other damage)
PLAYGROUND AREA/FLOORING Cleanliness and Maintenance
1. Surfaces in playground area, including benches and sneaker keeper, are clean (free of body fluids, dirt, dust, debris, gum, food particles, long-term spills and buildup) and in good condition (free of worn areas, damage, cuts, tears, worn areas)
2. Playground safety rules and other signs are clean (free or dirt, dust, smears, gum and buildup) legible, appropriate and in good condition (free of excessive wear, fading or damage)
3. Playground safety flooring is clean (free of body fluids, excessive dirt, dust, trash, debris, lint, gum, food particles, long-term spills, buildup and excess moisture that could cause it to become slippery) and in good condition (free of excessive wear, curling edges, warping, deep gouges or other damage to padded insulation and flooring materials), free of
SURFACES/FIXTURES (RESTROOMS)
(Includes sinks (basin and sink area); toilets/urinals; mirrors; hand contact fixtures (soap dispensers, paper towel dispensers, toilet paper dispensers, faucets on hand sinks, latches on stall doors, toilet handles and trash receptacles); baby changing station) Cleanliness and Maintenance
1. Surfaces and fixtures are clean (free of dirt, dust, buildup and clutter) and in good condition (free of visible scratches, chipped paint or graffiti)
2. Odor screen in urinal is functional (effective in controlling odors) and in good condition (free of tears)
3. Mirrors are clean (free of streaks, splashes, dirt, dust, lint and buildup) and in good condition (free of visible scratches, chips and cracks)
4. Trash receptacles are not overfull/overflowing
5. Baby changing station is clean (free of dirt, dust, stains and buildup), functional and in good condition (free of damage such as frayed or broken straps)
6. When sanitizing, sanitizer must remain on surfaces for 60 seconds to kill harmful contaminants
SUPPLIES/ODOR (RESTROOMS) Cleanliness and Maintenance
1. Restrooms are free of strong/unpleasant odors (e.g., from clogged or backed-up drain, air freshener, chemicals and cleaning compounds)
2. Restrooms and stalls are unlocked (open to public) unless in use by a guest
3. Hand soap, hand sanitizer, paper towels, toilet paper and toilet seat covers (if provided) are available
4. Hand soap (Ecolab®) and hand sanitizer (Kay®) dispensers and labels are clean (free of excessive dirt, dust, smudges, fingerprints, food spills, gum, oil build up) and dispensers are in good condition (free of cracks, excessive scratches or other damage); Labels are correct and in good condition (not damaged, worn, frayed, faded, torn or peeling)
5. Paper towel dispenser is filled, but not overfull
6. Deodorizer is replenished every 30 days (i.e., new deodorizer cup in dispenser)
TRASH (RESTROOMS) Cleanliness and Maintenance
1. Trash/sanitary napkin receptacles are clean (free of dirt, dust, spots, smears and buildup, free of unpleasant odors, and in good condition (free of rust, dents, gouges or other damage)
2. Trash/sanitary napkin receptacles have bags in them and are not overflowing
3. Liners/bags inside trash receptacles are clean (free of dirt, dust and buildup)
4. When sanitizing, sanitizer must remain on surfaces for 60 seconds to kill harmful contaminants
WALLS/DOORS (RESTROOMS) Cleanliness and Maintenance
1. Walls/doors are clean (free of dirt, dust, graffiti and smudges) and in good condition (free of visible scratches, chipped tiles/paint or holes)
2. Restroom doors and latches are fully functional and outer doors have appropriate signs designating men’s/women’s Restrooms
CEILING/LIGHTING (RESTROOMS) Cleanliness and Maintenance
1. Ceiling tiles, diffusers, returns, exhaust fans and sprinklers are clean (free of dirt, dust, cobwebs and oil buildup)
2. Ceiling tiles are clean (free of dirt, dust, cobwebs and oil buildup) and in good condition (free of holes, cracks, discoloration or water damage)
3. Diffusers/returns are clean (free of dirt, dust, cobwebs and oil buildup) and in good condition (free of visible scratches, chipped paint or other damage)
4. Fluorescent lighting is functional and uniform in color, type and wattage and lighting and lenses are clean (free of dirt, dust, smudges and oil buildup) and in good condition (not cracked or broken)
5. Fluorescent lighting fixtures have appropriate lens diffusers; lens diffusers are in good condition (free of cracks)
6. Fluorescent lighting tubes not covered by lenses has sleeve covers and rubber caps; glass light bulbs in food preparation areas are shielded or coated to prevent shattering
FLOORS/BASEBOARDS/DRAINS (RESTROOMS) Cleanliness and Maintenance
1. Floors, tile grout and baseboards are uncluttered, clean (free of excessive dirt, dust, debris, gum, long-term spills, food particles and discoloration) and in good condition (free of visible scratches, chips, missing/broken grout or other damage)
2. Drains are uncluttered, unclogged, clean (free of dirt, debris, mildew, mold, discoloration and buildup), functional and in good condition (free of gouges or other damage), with drain covers in place.
